Ingredients

  • 16 oz. vegetarian refried beans
  • 4 large flour tortillas
  • 2 c. chopped sweet potatoes
  • 1/2 medium avocado
  • 1/2 c. chopped scallions
  • 1 c. finely shredded lettuce
  • 2 Tbsp. chopped fresh cilantro

Instructions

  1. Spread warm refried beans evenly on each flour tortilla.
  2. Layer the chopped, boiled sweet potatoes, sliced avocado, chopped scallions, shredded lettuce, and chopped cilantro on top.
  3. Roll up each tortilla tightly to form a spiral or burrito shape.
