Ingredients

  • 1 3/4 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup margarine, melted
  • 8 oz. cream cheese, softened
  • 2 eggs
  • 3/4 cup sugar
  • 2 packages vanilla instant pudding (3 3/4 oz. each)
  • 3/4 cup milk
  • 2 cups cooked sweet potatoes
  • Dash of cinnamon

Instructions

  1. Combine graham cracker crumbs, sugar, and melted margarine, then press into a 9 x 13-inch pan. Set aside.
  2. Beat cream cheese, eggs, and sugar until fluffy and spread over the crust.
  3. Bake at 350°F for 20 minutes, then cool.
  4. Mix vanilla instant pudding with milk and beat for 2 minutes.
  5. Add cooked sweet potatoes and a dash of cinnamon to the pudding mixture.
  6. Fold Cool Whip into the pudding mixture.
  7. Pour the pudding mixture over the cream cheese layer.
  8. Sprinkle pecans over the top and refrigerate before serving.
