Ingredients

  • 2 c. white cornmeal
  • 2 eggs
  • 2 c. buttermilk
  • 1/4 tsp. salt
  • 24 smoked sausage links
  • 1/2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 4 Tbsp. vegetable oil

Instructions

  1. Preheat small metal or iron corn stick irons, divided into small sections.
  2. Prepare the batter by mixing cornmeal, flour, baking powder, baking soda, and salt in a bowl.
  3. In a separate bowl, beat eggs and then add buttermilk and vegetable oil, mixing well.
  4. Combine wet and dry ingredients until smooth.
  5. Insert smoked sausage links into the divided sections of the hot corn stick irons.
  6. Pour batter into each section of the irons, over the sausage links.
  7. Cook until the corn sticks are golden brown and cooked through, about 15-20 minutes.
  8. Remove from irons and serve warm.
