Ingredients

  • 1/2 cup butter
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 1/4 cups canned sweet potatoes, mashed
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup chopped nuts
  • 1/4 cup raisins
  • 1 cup milk

Instructions

  1. Preheat oven to 400°F and grease muffin tins.
  2. Cream butter and sugar together in a mixing bowl; add eggs and beat well.
  3. Puree the sweet potatoes and blend into the mixture.
  4. Sift together all-purpose flour, baking powder, salt, cinnamon, and nutmeg.
  5. Add chopped nuts and raisins to the dry ingredients.
  6. Alternate adding the dry ingredients and milk to the wet mixture, mixing gently after each addition.
  7. Do not overmix the batter.
  8. Fill the muffin tins completely with batter; muffins will not rise much.
  9. Bake in the preheated oven for 25 minutes or until a toothpick inserted in the center comes out clean.
