Ingredients

  • 1 large can sweet potatoes
  • 1/2 cup sugar
  • 1/4 cup seedless raisins
  • 1/4 cup coconut
  • 3 eggs
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/4 pound butter, melted
  • 1 cup marshmallows

Instructions

  1. Whip the sweet potatoes until smooth.
  2. Add sugar, raisins, coconut, nutmeg, cinnamon, and vanilla; mix well.
  3. Beat eggs slightly and add to the mixture.
  4. Pour the mixture into a greased baking dish.
  5. Bake at 300°F until the mixture is firm.
  6. Remove from oven.
  7. Sprinkle marshmallows over the top.
  8. Return to oven and bake until the marshmallows are browned.
