- Combine sour milk, brown sugar, molasses, shortening, salt, anise seed, and orange rind in a saucepan.

- Combine soda with 1/2 cup cold water.
- Add this to the milk mixture; it will bubble up.
- Pour all into a large bowl and add rye flour and 3 to 4 cups of white flour.
- Knead until the dough is smooth.
- Place in a greased bowl, cover, and let rise in a warm place until doubled in size.
- Punch down the dough and let it rest for 30 minutes.
- Divide the dough into two parts.
- Form each part into a loaf and place in well-greased pans.
- Cover and let rise until light, about one hour.
- Bake at 350°F (175°C) for 50 to 60 minutes.
