Ingredients

  • 1 pkg yeast
  • 1/2 c water
  • 1 c sour milk
  • 1/3 c brown sugar
  • 1/4 c molasses
  • 1/4 c shortening
  • 1 Tbsp salt
  • 1 tsp anise seed
  • 1/2 tsp baking soda
  • 1/2 c cold water
  • 1 Tbsp orange rind
  • 2 1/2 c rye flour
  • 3 to 4 c white flour

Instructions

  1. Soften yeast in 1/2 cup water; set aside.
  2. Combine sour milk, brown sugar, molasses, shortening, salt, anise seed, and orange rind in a saucepan.
  3. Bring to a boil and cool to lukewarm.
  4. Combine soda with 1/2 cup cold water.
  5. Add this to the milk mixture; it will bubble up.
  6. Pour all into a large bowl and add rye flour and 3 to 4 cups of white flour.
  7. Knead until the dough is smooth.
  8. Place in a greased bowl, cover, and let rise in a warm place until doubled in size.
  9. Punch down the dough and let it rest for 30 minutes.
  10. Divide the dough into two parts.
  11. Form each part into a loaf and place in well-greased pans.
  12. Cover and let rise until light, about one hour.
  13. Bake at 350°F (175°C) for 50 to 60 minutes.
