Swenson'S Potato Cake

Ingredients
- 2 cups sugar ⓘ
- 3/4 cup butter or shortening ⓘ
- 4 eggs, beaten separately ⓘ
- 1 cup milk ⓘ
- 2 1/2 cups flour ⓘ
- 1 cup mashed potatoes ⓘ
- 6 tablespoons cocoa ⓘ
- 1/2 teaspoon allspice ⓘ
- 1/2 teaspoon cloves ⓘ
- 1 teaspoon nutmeg ⓘ
- 3 teaspoons baking powder ⓘ
- 1 teaspoon salt ⓘ
- 1 teaspoon vanilla ⓘ
- 1 cup walnuts ⓘ
Instructions
- Cream sugar and butter or shortening; add beaten egg yolks, then mashed potatoes.
- Mix all dry ingredients separately, sifted together 3 or 4 times.
- Add alternately the dry ingredients and milk to the creamed mixture.
- Add vanilla and walnuts.
- Fold in beaten egg whites last.
- Bake at 350°F until done, approximately 30 minutes.
