Ingredients

  • 2 Tbsp. grated Swiss cheese
  • 2 slices bacon
  • 3 c. chopped onion
  • 2 eggs
  • 3/4 tsp. salt
  • 1 c. light cream
  • 2 Tbsp. butter
  • 1 unbaked 9-inch pastry shell

Instructions

  1. Fry bacon until crisp, then remove from pan and crumble.
  2. Add chopped onion to the bacon fat; cook until transparent and caramelized.
  3. Allow the onion to cool slightly.
  4. In a bowl, add eggs one at a time, beating well after each addition.
  5. Stir in salt and light cream.
  6. Pour the mixture into the unbaked pastry shell.
  7. Sprinkle grated Swiss cheese over the top.
  8. Dot with small pieces of butter.
  9. Bake in a moderate oven (350°F) for 30 minutes, or until the pie is firm and golden.
  10. Crumble the cooked bacon over the baked pie before serving.
