Ingredients

  • 2 1/2 to 5 lb. chicken pieces
  • salt and pepper
  • 1/4 lb. butter
  • 1 onion, diced
  • 1 green pepper
  • 2 tomatoes, diced
  • 1 pt. sour cream
  • paprika
  • sliced mushrooms (optional)

Instructions

  1. Saute diced onion, sliced green pepper, and sliced mushrooms in butter for about 15 minutes.
  2. Add diced tomatoes and simmer for 5 minutes. Add paprika until the mixture is deep red.
  3. Lay chicken pieces on top of the sauce and cover the pan.
  4. Cook for 45 minutes to 1 hour on medium heat until chicken is cooked through.
  5. Remove chicken from the pan and stir sour cream into the sauce.
  6. Pour the sauce over the chicken, garnish with parsley, and serve with rice.
