Ingredients

  • 1 box no-boil lasagna noodles
  • 1 to 2 cans refried beans
  • 1 lb ground beef
  • 1 package taco seasoning
  • 1 (28 oz) can crushed tomatoes
  • 1 small can sliced olives
  • 2 cups shredded taco cheese (Cheddar or Jack)
  • sour cream
  • chopped onions (optional)
  • 1 small can enchilada sauce or 1 small jar salsa

Instructions

  1. Mix together the crushed tomatoes and enchilada sauce or salsa; set aside.
  2. Brown the ground beef in a skillet and add the taco seasoning.
  3. If desired, cook chopped onions with the ground beef or add them during assembly.
  4. Layer no-boil lasagna noodles in a baking dish.
  5. Spread refried beans over the noodles.
  6. Add a layer of cooked ground beef with taco seasoning.
  7. Pour the tomato and enchilada mixture over the layers.
  8. Sprinkle sliced olives and shredded taco cheese on top.
  9. Repeat layers if desired.
  10. Bake in a preheated oven at 375°F (190°C) for about 25-30 minutes until bubbly and cheese is melted.
  11. Serve topped with sour cream.
