Ingredients

  • 3 eggs, beaten
  • 3/4 cup molasses
  • 3/4 cup light corn syrup
  • 1/2 cup strong black coffee
  • 2 tablespoons melted butter
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup pecans, chopped
  • 1/4 cup flour

Instructions

  1. Preheat oven to 350°F (175°C). Prepare an 8-inch (1-crust) pie pastry.
  2. In a mixing bowl, combine the beaten eggs, molasses, light corn syrup, black coffee, melted butter, salt, and vanilla. Mix thoroughly.
  3. In a separate bowl, toss chopped pecans with flour until coated.
  4. Add the pecan and flour mixture to the egg mixture. Stir well to combine.
  5. Pour the filling into the unbaked pie shell.
  6. Bake for 40 to 45 minutes, or until the filling is firm.
