Ingredients

  • 8 oz. shredded cheese (Cheddar and Monterey Jack recommended)
  • 4 medium onions, sliced
  • 1/3 cup parsley
  • 1 to 1 1/2 teaspoons sage
  • 3 tablespoons butter
  • 4 eggs
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 4 tablespoons currants (optional)
  • 1 deep dish pie crust

Instructions

  1. Steam the sliced onions for 10 to 11 minutes on High in the microwave. Combine with sage, parsley, and cheese; mix well.
  2. Stir in the eggs until well combined.
  3. Cut the butter into small pieces and add to the mixture. Mix in the sugar, cinnamon, ginger, and currants if using.
  4. Pour the mixture into the deep dish pie crust and smooth the top.
  5. Bake in a preheated oven at 375°F (190°C) for about 15 minutes or until set and golden.
