Ingredients

  • 1 (9 oz.) graham cracker crust (deep dish)
  • 1 c. boiling water
  • 1 (3 oz.) pkg. lemon flavored gelatin
  • 1 tsp. lemon extract
  • 1 c. vanilla ice cream
  • 1 (8 oz.) carton Cool Whip
  • 16 oz. well drained crushed pineapple
  • 2 c. mini marshmallows
  • 1/2 c. chopped pecans
  • 1/4 c. well drained halved maraschino cherries

Instructions

  1. Dissolve gelatin in boiling water; add ice cream and mix until dissolved.
  2. Refrigerate until slightly thickened, approximately 30 minutes.
  3. Fold in crushed pineapple, mini marshmallows, chopped pecans, and halved maraschino cherries.
  4. Pour mixture into the prepared graham cracker crust.
  5. Garnish with sliced kiwi fruit.
  6. Refrigerate for 3 hours before serving.
