Ingredients

  • 1 1/2 cups oil
  • 3 eggs
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 cups diced apples
  • 2/3 cup golden raisins
  • 2 cups sugar
  • 3 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Beat the oil and sugar until well combined.
  3. Add the eggs and beat until creamy.
  4. Sift together flour, salt, baking soda, and cinnamon.
  5. Gradually stir the dry mixture into the batter or mix on low speed.
  6. Add the diced apples, golden raisins, vanilla, and chopped walnuts. Mix until combined.
  7. Pour the batter into a buttered and floured 13 x 9-inch pan, angel food tube pan, or Bundt pan.
  8. Bake for 1 hour in a 13 x 9-inch pan or 1 hour and 15 minutes in other pans at 350°F (175°C).
  9. Cool in the pan before turning out.
