Ingredients

  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1/2 can Ro-Tel tomatoes with chiles
  • 1 teaspoon garlic salt
  • 1 cup shredded cheese
  • 3 tablespoons chili powder
  • 1/2 teaspoon salt
  • 15 oz. can kidney beans
  • 1/2 cup uncooked rice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Crumble ground beef into a 2-quart dish.
  3. Stir in chopped onion, Ro-Tel tomatoes with chiles, garlic salt, chili powder, salt, kidney beans, and uncooked rice.
  4. Cover the dish with a lid or foil.
  5. Bake in the preheated oven for 45 to 60 minutes.
  6. Stir the mixture once halfway through baking.
  7. Remove from oven, sprinkle with shredded cheese, and return to oven for 3 minutes or until cheese is melted.
