Ingredients

  • 20 eggs
  • 1/4 cup milk
  • 1/4 cup butter
  • 1 can mushroom soup (undiluted)
  • 1/4 cup sherry
  • 1/2 pound sharp Cheddar cheese, grated
  • cubes of ham or cooked, crumbled bacon
  • salt
  • pepper
  • paprika

Instructions

  1. Beat eggs well in a large bowl.
  2. Add milk, salt, and pepper to taste, then mix.
  3. Melt butter in a large skillet and scramble the eggs until medium consistency.
  4. Add ham or crumbled bacon to the eggs and stir to combine.
  5. Spray a 9 x 13-inch casserole dish with vegetable spray.
  6. Heat the mushroom soup, stirring until smooth.
  7. Remove the soup from heat and stir in sherry.
  8. Pour the mushroom soup mixture over the cooked eggs in the casserole dish.
  9. Sprinkle grated Cheddar cheese and paprika on top.
  10. Refrigerate at this point if desired.
  11. Bring to room temperature before baking.
  12. Bake uncovered at 250°F for 30 to 45 minutes until bubbly.
