Ingredients

  • 6 medium onions, chopped
  • 2 green peppers, diced
  • 1/2 lb. mushrooms, sliced
  • 6 Tbsp. oleo
  • 1 small can pimentos, chopped
  • 2 (10 1/2 oz.) cans tomato soup
  • 1/2 pt. coffee cream
  • 2 red sweet peppers, cut in strips
  • 1/2 cup chutney
  • 2 cans tuna
  • salt and pepper to taste

Instructions

  1. Melt the oleo in a large skillet over medium heat.
  2. Add chopped onions, green peppers, red peppers, and sliced mushrooms; cook until onions are transparent.
  3. Mix the tomato soup and coffee cream together, then stir into the cooked vegetables.
  4. Bring the mixture to a boil and cook for a couple of minutes.
  5. Drain the tuna and break into chunks; add to the skillet.
  6. Stir in the chutney last and mix well.
  7. Taste and adjust seasonings with salt and pepper as needed.
  8. Serve the dish over wild rice or fried noodles.
