  1. Combine cake mix, pudding mix, water, eggs, and oil in a large mixer bowl.
  2. Blend, then beat at medium speed with an electric mixer for 4 minutes.
  3. Stir in 1 1/3 cups coconut.
  4. Pour into a greased and floured pan.
  5. Bake at 350°F for 50 minutes or until the cake begins to pull away from the sides of the pan.
  6. Do not underbake.
  7. Cool in the pan for 15 minutes.
  8. Remove the cake from the pan and finish cooling on a rack.
  9. Cut the cake in half to make two 6 x 8-inch layers.
  10. Spread strawberry jam and 1/2 cup of whipped topping between the layers.
  11. Frost with remaining whipped topping and sprinkle 2 cups of coconut on top.
  12. Decorate with a green or red bow.
