Ingredients

  • 2 medium onions
  • 3 Tbsp. butter
  • 4 large potatoes

  • 1/4 tsp. paprika
  • 1 1/2 c. boiling water
  • 4 Tbsp. butter
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. In a large saucepan, fry the chopped onions in 3 tablespoons butter until golden.
  2. Add chopped vegetables, salt, paprika, and boiling water. Bring to a boil and simmer until vegetables are tender, about 20 minutes.
  3. Mash the cooked vegetables with a potato masher. Melt 4 tablespoons butter in the saucepan.
  4. Blend in the flour and let the mixture bubble for a minute.
  5. Remove from heat and stir in milk and bouillon cubes until dissolved.
  6. Cook over medium heat, stirring constantly, until the soup thickens and becomes smooth.
  7. Season with salt and pepper to taste; add cooked vegetables and heat through.
  8. Serve the soup hot or cold, garnished with chopped chives and parsley. Bacon and cheese can be added for extra flavor.
