Ingredients

  • 1 head romaine lettuce
  • 3 to 4 tomatoes
  • 1 green pepper
  • 1 can chickpeas (garbanzo beans)
  • 1 can black olives
  • 1 jar petrocini peppers (Greek peppers)
  • 1 cucumber
  • 3 to 4 celery stalks
  • 1 red or sweet onion (optional)

Instructions

  1. Wash the romaine lettuce, tomatoes, green pepper, and celery stalks.
  2. Start with the romaine lettuce; select a few leaves, then cut each leaf into 3 or 4 large pieces.
  3. Cut the tomatoes in half, then into quarters or 3-4 pieces.
  4. Remove the stem, seeds, and veins from the green pepper, then cut it into strips and bite-sized pieces.
  5. Cut the cucumber down until you see the seeds, then stripe and cut into halves or whole pieces.
  6. Drain and rinse the can of chickpeas and the can of black olives.
  7. Drain the jar of petrocini peppers.
  8. Chop the celery stalks into bite-sized pieces.
  9. Slice the red or sweet onion if using.
  10. Combine all prepared vegetables, chickpeas, olives, and peppers in a large bowl.
  11. Add croutons if desired.
  12. Toss the salad with your preferred dressing just before serving.
