  • 1/4 cup olive oil

Instructions

  1. Place bulgar in a large, heatproof bowl.
  2. Bring water to a boil.
  3. Pour boiling water over bulgar.
  4. Let stand for 20 minutes.
  5. Drain bulgar thoroughly.
  6. Return bulgar to the large bowl.
  7. Add chopped tomatoes, dried currants, roasted sunflower seeds, shredded carrot, chopped green onions, minced garlic, chopped mint, chopped basil, and a pinch of dried oregano.
  8. In a small bowl, whisk together red wine vinegar, tamari (or soy sauce), and olive oil.
  9. Pour the dressing over the bulgar mixture.
  10. Mix well to combine all ingredients.
