Ingredients

  • 1 pkg. yellow cake mix
  • 1 (20 oz.) can crushed pineapple (in juice)
  • 3/4 c. sugar
  • 2 (3 1/2 oz. each) pkg. instant vanilla pudding mix
  • 3 c. milk
  • 1 c. heavy whipping cream
  • 1/4 c. confectioners sugar
  • 1 tsp. vanilla
  • 3/4 c. flaked coconut, toasted

Instructions

  1. Bake the yellow cake in a 13 x 9-inch pan according to package directions.
  2. In a medium saucepan, combine crushed pineapple with juice and sugar; cook over medium heat until thick and syrupy, about 20 minutes.
  3. When the cake is done baking, pierce the top with a fork about 1 inch apart.
  4. Pour the pineapple mixture evenly over the cake and spread gently.
  5. Allow the cake to cool completely before serving.
