Ingredients

  • 2 c. zucchini, grated
  • 1 c. sugar
  • 1 egg
  • 2/3 c. oil
  • 1/2 c. walnuts
  • 1/2 c. raisins
  • 1 1/2 c. flour
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine grated zucchini, sugar, egg, and oil.
  3. Add the flour, cinnamon, nutmeg, and salt; mix until just combined.
  4. Fold in the walnuts and raisins.
  5. Pour the batter into a greased loaf pan.
  6. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before slicing. Can be frozen for longer storage, toasted, or served with cream cheese.
