Thin Vegetable Soup
Ingredients
- 8 oz. lean hamburger ⓘ
- 1 c. carrots, finely chopped ⓘ
- 2 c. cabbage, shredded ⓘ
- 1 c. celery, finely chopped ⓘ
- 1 medium onion, chopped ⓘ
- 4 c. tomatoes, stewed ⓘ
- 3 c. beef stock ⓘ
- 3 c. water ⓘ
- 3 medium potatoes, diced ⓘ
- 1/2 c. peas ⓘ
- 1 c. green beans, cut ⓘ
- 1/2 c. corn ⓘ
- 4 oz. mushrooms, sliced ⓘ
- 1/3 c. barley (raw) ⓘ
Instructions
- Brown hamburger and drain.
- Combine all ingredients together in soup pot.
- Bring to a boil; reduce heat, cover and simmer until all vegetables are tender.
- Serves 10.
