Ingredients

  • 15 lasagne noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 10 oz. frozen chopped spinach, thawed and drained
  • 1/4 teaspoon pepper

Instructions

  1. Cook the lasagne noodles according to package directions and drain.
  2. Combine ricotta, shredded mozzarella, grated Parmesan, eggs, thawed and drained spinach, pepper, and nutmeg in a mixing bowl.
  3. Spread a thin layer of sauce in a 9 x 13-inch baking dish.
  4. Spread the cheese mixture evenly over each cooked lasagne noodle.
  5. Roll up each noodle and place seam side down in the baking dish.
  6. Repeat for all noodles.
  7. Cover the assembled roll-ups with remaining sauce.
  8. Bake, covered, at 350°F for 25 minutes.
  9. Uncover and bake for an additional 5 minutes.
