Three Cheese Lasagne Roll-Ups

- Cook the lasagne noodles according to package directions and drain.
- Combine ricotta, shredded mozzarella, grated Parmesan, eggs, thawed and drained spinach, pepper, and nutmeg in a mixing bowl.
- Spread a thin layer of sauce in a 9 x 13-inch baking dish.
- Spread the cheese mixture evenly over each cooked lasagne noodle.
- Roll up each noodle and place seam side down in the baking dish.
- Repeat for all noodles.
- Cover the assembled roll-ups with remaining sauce.
- Bake, covered, at 350°F for 25 minutes.
- Uncover and bake for an additional 5 minutes.
