Ingredients

  • 2 2/3 cups cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cloves
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup shortening
  • 3 cups brown sugar
  • 4 eggs
  • 1 cup buttermilk
  • 1 cup chopped walnuts

Instructions

  1. Cream the shortening in a mixing bowl, then add 2 cups of brown sugar and beat until well combined.
  2. Add 2 egg whites and 4 yolks to the mixture and mix thoroughly.
  3. Sift together the cake flour, salt, baking powder, soda, cloves, and cinnamon in a separate bowl.
  4. Gradually add the sifted flour mixture alternately with buttermilk to the creamed mixture, mixing well after each addition.
  5. Fold in the chopped walnuts into the batter.
  6. Pour the batter into a prepared cake pan and bake at 350°F (175°C) until a toothpick inserted into the center comes out clean.
  7. Prepare a meringue by beating egg whites until stiff peaks form, then gradually add remaining sugar.
  8. Spread the meringue over the cooled cake and toast until golden brown.
  9. Serve slices of the toasted meringue cake and enjoy.
