- Cut the tofu into quarters and boil in salted water for 20 minutes.
- Drain and crumble the tofu.
- Combine the crumbled tofu with chopped green onions, grated carrot, soaked and chopped shiitake mushrooms, chopped water chestnuts, mayonnaise, cream of mushroom soup, and eggs.
- Mix well until all ingredients are evenly combined.
- Transfer the mixture to a baking dish and bake at 350°F (175°C) for 40 minutes.
