Ingredients

  • 19 oz tofu
  • 2 Tbsp oil
  • 2 cloves garlic
  • 2 onions
  • 2 large tomatoes
  • 2 green peppers
  • 3 mushrooms
  • 2 cups water
  • 3 bay leaves
  • 1/2 cup ketchup
  • 3 Tbsp butter
  • 2 1/2 Tbsp soy sauce
  • dash of pepper
  • 1/3 cup grated cheese

Instructions

  1. Heat oil in a wok or large heavy pot.
  2. Add garlic and onions; sauté for 3 to 4 minutes.
  3. Add tomatoes, green peppers, and mushrooms; sauté for another 3 to 4 minutes.
  4. Add water and drop in 1 bay leaf.
  5. Bring to a boil, then cover the pot and simmer for 15 minutes.
  6. Add the remaining ingredients except cheese: tofu, ketchup, butter, soy sauce, pepper.
  7. Cover and simmer, stirring occasionally, for about 1 hour.
  8. Remove bay leaves and serve over cooked spaghetti noodles.
  9. Top with grated cheese before serving.
