Tofu Spaghetti Sauce

- Heat oil in a wok or large heavy pot.
- Add garlic and onions; sauté for 3 to 4 minutes.
- Add tomatoes, green peppers, and mushrooms; sauté for another 3 to 4 minutes.
- Add water and drop in 1 bay leaf.
- Bring to a boil, then cover the pot and simmer for 15 minutes.
- Add the remaining ingredients except cheese: tofu, ketchup, butter, soy sauce, pepper.
- Cover and simmer, stirring occasionally, for about 1 hour.
- Remove bay leaves and serve over cooked spaghetti noodles.
- Top with grated cheese before serving.
