Ingredients

  • 3 beaten eggs
  • 1/3 cup dry bread crumbs
  • 1/4 cup grated Parmesan
  • 1 clove garlic, minced
  • 1/2 teaspoon thyme
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1 package frozen chopped spinach, cooked and well drained
  • 1/3 cup chopped celery
  • 3 tablespoons sliced green onions
  • 3 medium tomatoes

Instructions

  1. Combine eggs, bread crumbs, Parmesan cheese, garlic, thyme, Worcestershire sauce, and salt in a bowl.
  2. Add cooked and drained spinach, chopped celery, and sliced green onions; mix well.
  3. Cut tomatoes in half crosswise and scoop out the centers, leaving ¼ inch thick shells.
  4. Spoon the spinach mixture into the tomato shells.
  5. Sprinkle with additional bread crumbs on top.
  6. Place in a greased 10 x 6 x 2-inch baking dish.
  7. Bake, covered, at 375°F (190°C) for 20 to 25 minutes.
