Ingredients

  • 6 qt. tomatoes
  • 3 large onions
  • 2 c. chopped celery
  • 2 cloves garlic
  • 2 sweet red peppers
  • 1 c. vinegar
  • 3/4 c. sugar
  • 2 tsp. paprika
  • 1/4 tsp. red pepper
  • 1 tsp. cinnamon
  • 1 tsp. mustard
  • 1/4 tsp. cloves
  • 1 Tbsp. salt

Instructions

  1. Wash vegetables; slice and remove seeds from peppers.
  2. Cook tomatoes, onions, celery, garlic (if using), and red peppers until vegetables are tender.
  3. Press the cooked mixture through a fine sieve or puree in a blender until smooth.
  4. Bring the pureed mixture to a boil and cook rapidly for about 30 minutes to evaporate some of the liquid.
  5. Add vinegar, sugar, paprika, red pepper, cinnamon, mustard, cloves, and salt to the mixture.
  6. Cook, stirring occasionally, until the mixture is thickened to desired consistency.
  7. Fill hot, sterilized jars with the ketchup and seal immediately.
