Ingredients

  • 1 (9-inch) pie shell, prebaked 5 minutes
  • 4 large tomatoes, cored and cut into thick slices
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. olive oil
  • 2 cloves garlic, crushed
  • 1 medium onion, finely chopped
  • 1/2 cup Parmesan cheese, grated
  • 2 eggs
  • 1 cup milk
  • 1/2 cup Monterey Jack cheese, grated
  • 1/2 cup fresh basil, chopped
  • 2 Tbsp. fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F.
  2. Put tomato slices on paper towels and pat to remove excess moisture.
  3. Sprinkle tomato slices with salt and pepper.
  4. In a small skillet, heat olive oil and sauté crushed garlic and chopped onion until softened. Cool the mixture.
  5. Sprinkle 1/4 cup of grated Parmesan cheese over the prebaked pie shell.
  6. Spread the cooled onion mixture evenly over the cheese in the crust.
  7. Arrange tomato slices in a pretty pattern on top of the onion mixture.
  8. Sprinkle remaining Parmesan, grated Monterey Jack cheese, chopped basil, chopped parsley, and chopped green onions over the top.
  9. Bake in the preheated oven for about 15 minutes or until the cheese is bubbly and golden.
