Tomato Tart
A vibrant tomato tart featuring layered tomatoes, savory cheeses, and fresh herbs, perfect for summer gatherings or a light, flavorful meal.
Ingredients
- 1 (9-inch) pie shell, prebaked 5 minutes
- 4 large tomatoes, cored and cut into thick slices ⓘ
- 1/2 tsp. salt ⓘ
- 1/2 tsp. pepper ⓘ
- 1 Tbsp. olive oil ⓘ
- 2 cloves garlic, crushed ⓘ
- 1 medium onion, finely chopped ⓘ
- 1/2 cup Parmesan cheese, grated ⓘ
- 2 eggs ⓘ
- 1 cup milk ⓘ
- 1/2 cup Monterey Jack cheese, grated ⓘ
- 1/2 cup fresh basil, chopped ⓘ
- 2 Tbsp. fresh parsley, chopped ⓘ
Instructions
- Preheat oven to 375°F.
- Put tomato slices on paper towels and pat to remove excess moisture.
- Sprinkle tomato slices with salt and pepper.
- In a small skillet, heat olive oil and sauté crushed garlic and chopped onion until softened. Cool the mixture.
- Sprinkle 1/4 cup of grated Parmesan cheese over the prebaked pie shell.
- Spread the cooled onion mixture evenly over the cheese in the crust.
- Arrange tomato slices in a pretty pattern on top of the onion mixture.
- Sprinkle remaining Parmesan, grated Monterey Jack cheese, chopped basil, chopped parsley, and chopped green onions over the top.
- Bake in the preheated oven for about 15 minutes or until the cheese is bubbly and golden.
