Ingredients

  • 5 boxes chopped spinach, drained
  • 1 1/2 cups rice, partially cooked
  • 1/2 cup half and half or milk
  • 4 cloves pressed garlic
  • 1/4 pound butter or margarine, melted
  • 1/2 cup bread crumbs
  • 1 tablespoon salt
  • 5 beaten eggs
  • 3/4 cup grated Parmesan cheese
  • 1/4 cup olive oil

Instructions

  1. Beat the eggs in a large bowl.
  2. Fold in drained chopped spinach, partially cooked rice, half and half or milk, pressed garlic, melted butter or margarine, grated Parmesan cheese, and salt.
  3. Preheat the oven to 350°F (175°C).
  4. Pour olive oil on the bottom of a greased pan.
  5. Sprinkle 1/4 cup bread crumbs on the bottom.
  6. Pour the spinach and rice mixture over the bread crumbs.
  7. Sprinkle remaining bread crumbs on top.
  8. Bake in the preheated oven for 45 minutes to 1 hour, or until golden brown on the bottom.
