Ingredients

  • 1 cup cornmeal
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 2 eggs
  • 1 (8 oz.) can creamed corn
  • 2 cloves garlic, chopped
  • 5 jalapeno peppers, chopped
  • 1 medium onion, chopped
  • 1/2 pound cheese, grated
  • 1 pound ground beef, cooked and drained

Instructions

  1. Stir together cornmeal, salt, and baking soda.
  2. Add buttermilk, eggs, creamed corn, chopped garlic, chopped jalapenos, and chopped onion; mix well.
  3. Stir in grated cheese.
  4. Grease a 9 x 12-inch pan and spread half of the batter evenly in the pan.
  5. Spread cooked and drained ground beef over the first layer of batter.
  6. Top with the remaining batter, spreading evenly.
  7. Bake at 350°F (175°C) for 1 hour.
  8. Serve hot, ideally with a green salad for a complete meal.
