Ingredients

  • 3 eggs
  • 2 c. sugar
  • 3 tsp. vanilla
  • 1 c. oil
  • 2 c. shredded zucchini
  • 3 c. flour
  • 1/4 tsp. salt
  • 3 tsp. cinnamon
  • 1 tsp. soda
  • 1 c. chopped nuts
  • 1 c. raisins

Instructions

  1. Preheat oven to 375°F.
  2. Grease and flour 2 loaf pans.
  3. Beat eggs until light and fluffy.
  4. Add sugar, oil, and vanilla, blending well. Stir in zucchini.
  5. Sift all dry ingredients together: flour, salt, cinnamon, and soda.
  6. Blend the dry mixture with the creamed egg mixture.
  7. Fold in chopped nuts and raisins.
  8. Pour the batter into 2 floured and greased loaf pans.
  9. Bake at 375°F for 15 minutes, then reduce temperature to 350°F and bake for an additional 45 minutes or until done.
  10. Cool on racks before removing from pans.
