- Preheat oven to 375°F.
- Grease and flour 2 loaf pans.
- Beat eggs until light and fluffy.
- Add sugar, oil, and vanilla, blending well. Stir in zucchini.
- Sift all dry ingredients together: flour, salt, cinnamon, and soda.
- Blend the dry mixture with the creamed egg mixture.
- Fold in chopped nuts and raisins.
- Pour the batter into 2 floured and greased loaf pans.
- Bake at 375°F for 15 minutes, then reduce temperature to 350°F and bake for an additional 45 minutes or until done.
- Cool on racks before removing from pans.
