Ingredients

  • 2 Tbsp. olive oil
  • 2 medium onions, chopped
  • 2 c. chopped carrots
  • 2 cloves garlic, crushed
  • 2 stalks celery, chopped
  • 1 (9 oz.) box frozen cut green beans
  • 7 c. beef broth
  • 1 (14.5 oz.) can stewed tomatoes
  • 1 c. elbow macaroni
  • 1 (15 oz.) can Great Northern beans, drained
  • 2 tsp. dried basil

Instructions

  1. Heat oil in a large pot over medium-high heat.
  2. Add chopped onions, carrots, crushed garlic, and chopped celery. Cook, stirring occasionally, until carrots are slightly soft, about 10 minutes.
  3. Add frozen green beans, beef broth, and stewed tomatoes to the pot.
  4. Bring the soup to a boil; reduce heat and simmer, covered, for 30 minutes.
  5. Add elbow macaroni, drained Great Northern beans, and dried basil.
  6. Simmer, covered, until the macaroni is tender, about 10 minutes.
  7. Ladle soup into bowls and top each with Parmesan cheese.
