  • 1 lb. Italian sausage, cut up

Instructions

  1. Put all the vegetables, beef ribs, salt, pepper, and boiling water in a large saucepan.
  2. Cover and cook over low heat for about 1.5 hours.
  3. Remove meat from the bone and return it to the soup.
  4. Add the sausage and cook for another 30 minutes.
  5. Serve hot with grated Parmesan cheese on top.
