Ingredients

  • 3/4 cup butter
  • 2 cups flour
  • 1/2 cup sifted powdered sugar
  • 2 cups sugar
  • 4 eggs
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 cup coconut
  • 8 oz can crushed pineapple

Instructions

  1. Combine 3/4 cup melted butter, 2 cups flour, and 1/2 cup powdered sugar; mix well.
  2. Press the mixture into a well-greased and floured 9 x 13-inch pan.
  3. Bake at 300°F (150°C) for 25 minutes.
  4. In a separate bowl, combine the remaining ingredients: 2 cups sugar, 4 beaten eggs, 1/4 cup flour, baking powder, coconut, and crushed pineapple; mix well.
  5. Spread the filling over the hot crust.
  6. Bake an additional 40 to 45 minutes or until firm.
  7. Allow to cool slightly, then sprinkle with powdered sugar before serving.
