Ingredients

  • 2 c. bread crumbs
  • 3/4 c. sugar
  • 3 large eggs
  • 1/3 c. chopped nuts
  • 1/3 c. dark raisins
  • 1 tsp. vanilla flavoring
  • 2 Tbsp. lemon juice
  • 2 c. milk
  • 1/2 c. brown sugar
  • 3/4 stick butter, melted
  • 1/3 c. flaked coconut
  • 1/3 c. crushed pineapple, undrained
  • 1 tsp. lemon extract

Instructions

  1. Grease an 11 3/4 x 7 1/2 x 3/4-inch baking dish with butter.
  2. Mix bread crumbs, sugar, beaten eggs, chopped nuts, dark raisins, vanilla flavoring, lemon juice, brown sugar, melted butter, flaked coconut, crushed pineapple (undrained), and lemon extract in order listed.
  3. Pour the mixture into the prepared baking dish.
  4. Bake at 350°F for 40 to 45 minutes.
  5. Remove from oven and cool at room temperature.
  6. Serve with Cool Whip or your favorite topping.
