  • 1/4 small red onion, sliced or diced
  • 1 tablespoon cider vinegar
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon oregano
  • salt and pepper to taste

Instructions

  1. Drain pineapple chunks and reserve 2 tablespoons of juice.
  2. In a large bowl, toss pineapple, crumbled bacon, washed and stemmed spinach, sliced celery or water chestnuts, and sliced or diced red onion.
  3. In a small bowl, combine the reserved pineapple juice with cider vinegar, vegetable oil, oregano, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss everything together to combine.
  5. Serve immediately.

Tips & Substitutions

For added crunch, consider substituting sliced almonds or sunflower seeds for the bacon. If you prefer a vegetarian version, omit the bacon and add avocado for creaminess. To enhance flavors, try adding a touch of honey to the dressing or incorporating some diced mango. Ensure the spinach is thoroughly washed to avoid grit in your salad.

Serving Suggestions

This Tropical Spinach Salad makes a refreshing side for grilled chicken or fish. For a heartier meal, serve it alongside a slice of crusty bread or pair it with a light soup like our Rice-Pea Casserole. It’s perfect for summer picnics or potlucks, where it can shine alongside any American recipes.

Storage & Reheating

Store any leftover salad in an airtight container in the refrigerator for up to 2 days. However, be aware that the spinach may wilt. To revive the salad, you can lightly toss in some fresh spinach just before serving. If you've made extra dressing, store it separately in the fridge for up to a week.

Frequently Asked Questions

Can I use fresh pineapple instead of canned?

Yes, fresh pineapple can be used for a more vibrant flavor. Just cut it into chunks and use the same amount as specified for canned pineapple. You might want to adjust the dressing slightly to account for the lack of juice.

What can I substitute for spinach?

If spinach isn’t available, you can use kale or arugula for a different flavor profile. Both greens will provide a nice texture and pair well with the other ingredients in the salad.

How can I make this salad more filling?

To make the salad more filling, consider adding some cooked quinoa, chickpeas, or grilled chicken. These additions will provide protein and make the salad a complete meal.
