A hearty tuna and vegetable casserole with tender cauliflower and carrots, topped with crunchy crackers, perfect for a comforting family dinner or casual gathering.

Ingredients

  • 1 medium cauliflower
  • 1 cup sliced carrots
  • 2 tablespoons chopped onion
  • 1 tablespoon margarine
  • 1 can mushroom soup
  • 2 tablespoons milk
  • 1 can tuna, drained and flaked
  • 1/2 cup crumbled crackers

Instructions

  1. Separate the cauliflower into florets and cook with sliced carrots until tender-crisp. Drain well.
  2. In a skillet, sauté chopped onion in margarine until tender.
  3. In a bowl, combine the sautéed onion, mushroom soup, milk, and drained flaked tuna. Mix well.
  4. Place the cooked cauliflower and carrots in a 1 1/2-quart casserole dish.
  5. Pour the soup mixture over the vegetables.
  6. Sprinkle crumbled crackers on top.
  7. Bake at 350°F for 40 minutes until heated through and golden on top.
