Ingredients

  • 2 c. turkey, cut in pieces
  • 2 c. sliced celery
  • 1 c. chopped cashews
  • 2 cans cream of chicken soup (10 1/2 oz.)
  • 4 tsp. chopped onions
  • 3 c. cooked rice
  • 2 Tbsp. lemon juice
  • 1/2 c. water
  • 1 1/2 c. mayonnaise

Instructions

  1. Mix together the turkey, sliced celery, chopped cashews, cream of chicken soup, chopped onions, cooked rice, and lemon juice.
  2. In a separate bowl, mix mayonnaise and water until smooth.
  3. Add the mayonnaise mixture to the turkey mixture and stir well.
  4. Pour the combined mixture into a greased casserole dish.
  5. Top the casserole with crushed potato chips.
  6. Bake at 450°F (232°C) for 15 minutes until bubbly and golden.
