Ingredients

  • 1/2 to 2 lb. cooked turkey, cut into 2-inch cubes
  • 1 medium onion, chopped
  • 2 Tbsp. butter
  • 1 c. turkey or chicken broth
  • 1 bay leaf
  • 1/2 tsp. salt
  • 1/2 tsp. thyme
  • 2 (1 lb.) cans white beans, without sauce
  • 1/4 c. tomato paste

Instructions

  1. In a large saute pan, cook chopped onion in butter until soft and translucent.
  2. Add turkey or chicken broth, bay leaf, salt, and thyme to the pan.
  3. Drain and discard the liquid from the cans of white beans and add the beans to the pan.
  4. Stir in tomato paste and mix well.
  5. Add cubed cooked turkey and smoked sausage pieces to the mixture.
  6. Transfer everything into a 2 1/4 to 2 1/2 quart stove-to-table casserole dish.
  7. Cover and bake in a preheated 350°F oven for 20 minutes.
  8. Uncover and bake for an additional 10 to 15 minutes until hot and bubbly.
  9. Serve with crusty French bread, cheese, and fresh fruit.
