- In a large saute pan, cook chopped onion in butter until soft and translucent.
- Add turkey or chicken broth, bay leaf, salt, and thyme to the pan.
- Drain and discard the liquid from the cans of white beans and add the beans to the pan.
- Stir in tomato paste and mix well.
- Add cubed cooked turkey and smoked sausage pieces to the mixture.
- Transfer everything into a 2 1/4 to 2 1/2 quart stove-to-table casserole dish.
- Cover and bake in a preheated 350°F oven for 20 minutes.
- Uncover and bake for an additional 10 to 15 minutes until hot and bubbly.
- Serve with crusty French bread, cheese, and fresh fruit.
