Ingredients

  • 1 lb. ground turkey
  • 1 (6 oz.) can tomato paste
  • 1/2 cup chopped onion
  • 1 teaspoon chili powder
  • 1/2 cup chopped green pepper
  • 1/2 teaspoon dried oregano leaves
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 3/4 cup dried kidney beans, cooked
  • 1/8 teaspoon ground red pepper
  • 30 fat-free saltines
  • 1 cup water
  • 3 medium tomatoes, peeled and chopped

Instructions

  1. In a large skillet or pot, cook the ground turkey over medium heat until browned, breaking it apart as it cooks.
  2. Add chopped onion, green pepper, and minced garlic to the skillet; cook until vegetables are tender, about 5 minutes.
  3. Stir in chili powder, dried oregano, ground cumin, and ground red pepper; cook for 1 minute to release spices' aroma.
  4. Add tomato paste, chopped tomatoes, cooked kidney beans, and water; stir well.
  5. Bring to a boil, then reduce heat and simmer uncovered for about 20-25 minutes, until flavors meld and chili thickens.
  6. Taste and adjust seasoning if needed. Serve hot with saltines on the side.
