Ingredients

  • 8 manicotti shells
  • 1 lb ground raw turkey
  • 1 large can meatless spaghetti sauce
  • 1 beaten egg
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup snipped parsley
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook manicotti in boiling water about 18 minutes or until tender but still firm. Drain well.
  2. In a large skillet, cook ground turkey until no longer pink. Drain excess fat if necessary.
  3. Stir in meatless spaghetti sauce and heat through.
  4. In a separate bowl, mix together beaten egg, ricotta cheese, shredded mozzarella cheese, snipped parsley, and grated Parmesan cheese.
  5. Stuff the cheese mixture into the cooked manicotti shells.
  6. Spoon one-third of the sauce mixture into a 12 x 8 x 2-inch baking dish.
  7. Place the stuffed shells atop the sauce in the dish.
  8. Cover the shells with the remaining sauce mixture, ensuring they are covered.
  9. Bake, covered, in a 350°F oven for 25 to 30 minutes or until hot and bubbly.
