Ingredients

  • 1 pkg. lean ground turkey
  • 4 large baking potatoes
  • 1/2 c. finely chopped onion
  • 1/2 c. chopped sweet green pepper
  • 2 Tbsp. Worcestershire sauce
  • 1/2 tsp. minced fresh garlic
  • 3/4 tsp. black pepper
  • 1/4 tsp. cayenne
  • 1 1/2 tsp. salt
  • 1/2 c. milk
  • 2 Tbsp. sour cream
  • 6 slices bacon
  • 1 tsp. paprika

Instructions

  1. Bake the potatoes until tender.
  2. Meanwhile, sauté the ground turkey until cooked through.
  3. Add chopped onion, green pepper, Worcestershire sauce, minced garlic, black pepper, cayenne, and salt to the turkey. Saute for 3 to 5 minutes until the onion is translucent.
  4. Remove from heat.
  5. Cut the tops off the baked potatoes and scoop out the cooked potato flesh, reserving the shells.
  6. Combine the scooped-out potatoes with milk and sour cream. Whip until smooth.
  7. Spoon one-fourth of the turkey mixture into each potato shell.
  8. Top each stuffed potato with whipped potatoes.
  9. Sprinkle crumbled bacon and paprika over the top.
  10. Bake at 400°F for 15 to 20 minutes until hot and lightly browned.
