Ingredients

  • 1 pkg. (6 oz.) bow tie pasta
  • 3 Tbsp. butter, divided
  • 2 boneless skinless chicken breasts, halved and cut into bite size pieces
  • 4 oz. fresh mushrooms, sliced (about 1 c.)
  • 1 zucchini, thinly sliced
  • 1/2 c. chopped red, yellow or orange bell pepper
  • 2 Tbsp. dry white wine
  • 3 Tbsp. chopped fresh basil
  • 3 oz. shredded Parmesan cheese (3/4 c.)

Instructions

  1. Cook pasta, drain and keep warm.
  2. In large skillet over medium heat, melt 2 tablespoons butter.
  3. Add chicken and mushrooms, cook about 5 minutes or until golden brown; stirring often.
  4. Add zucchini and bell pepper; cook about 3 minutes or until vegetables are tender crisp.
  5. Add wine and lemon juice; simmer one minute. Remove from heat, stir in basil and remaining butter.
  6. Add pasta and 1/2 cup Parmesan cheese; toss to mix.
  7. Place on platter to serve, sprinkle with remaining cheese.
