Tuxedo Pasta
Ingredients
- 1 pkg. (6 oz.) bow tie pasta ⓘ
- 3 Tbsp. butter, divided ⓘ
- 2 boneless skinless chicken breasts, halved and cut into bite size pieces ⓘ
- 4 oz. fresh mushrooms, sliced (about 1 c.) ⓘ
- 1 zucchini, thinly sliced ⓘ
- 1/2 c. chopped red, yellow or orange bell pepper ⓘ
- 2 Tbsp. dry white wine ⓘ
- 3 Tbsp. chopped fresh basil ⓘ
- 3 oz. shredded Parmesan cheese (3/4 c.) ⓘ
Instructions
- Cook pasta, drain and keep warm.
- In large skillet over medium heat, melt 2 tablespoons butter.
- Add chicken and mushrooms, cook about 5 minutes or until golden brown; stirring often.
- Add zucchini and bell pepper; cook about 3 minutes or until vegetables are tender crisp.
- Add wine and lemon juice; simmer one minute. Remove from heat, stir in basil and remaining butter.
- Add pasta and 1/2 cup Parmesan cheese; toss to mix.
- Place on platter to serve, sprinkle with remaining cheese.
