Ingredients

  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 2 garlic cloves, minced
  • 1/4 cup butter
  • 1 smoked ham hock
  • 1/2 pound dried split peas
  • 4 cups low-salt chicken broth
  • 1 bay leaf
  • 1 1/2 cups frozen peas, thawed

Instructions

  1. In a kettle, cook the onion, celery, carrots, and garlic in the butter, covered, stirring occasionally, for 10 minutes or until soft.
  2. Add the ham hock, split peas, chicken broth, bay leaf, and 2 cups of water.
  3. Bring the liquid to a boil, skimming froth, and cook the soup, covered partially, in a preheated 400°F (200°C) oven for 1 hour.
  4. Transfer the ham hock to a cutting board; cool slightly and cut the meat into small pieces.
  5. Stir the meat into the soup; season with salt and pepper and discard the bay leaf.
  6. Just before serving, stir in the thawed peas and cook for another 1 to 2 minutes.
