Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 clove garlic, minced
  • 15 1/2 oz can kidney beans, rinsed and drained
  • 14 1/2 oz can no-salt whole tomatoes
  • 8 oz can no-salt tomato sauce
  • 8 oz can no-salt whole kernel corn, drained
  • 2 Tbsp red wine vinegar
  • 2 Tbsp Worcestershire sauce
  • 1 cup chopped chicken or turkey
  • 1 Tbsp packed brown sugar
  • 1 tsp chili powder
  • 1/4 tsp dry mustard

Instructions

  1. In a 2-quart casserole, combine chopped onion, chopped green pepper, and minced garlic; cover and cook on High for 2 to 4 minutes.
  2. Add kidney beans, whole tomatoes, tomato sauce, drained corn, red wine vinegar, Worcestershire sauce, chopped chicken, brown sugar, chili powder, and dry mustard to the casserole.
  3. Cover the casserole.
  4. Reduce microwave power to 70% and cook for 25 to 30 minutes, stirring twice during cooking.
