Ingredients

  • 2 pkg. active dry yeast
  • 1/2 cup warm water
  • 4 eggs
  • 6 egg yolks
  • 1 cup sugar
  • 3/4 cup margarine, melted
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 2 tablespoons grated lemon peel
  • 2 cups warm milk
  • 9 to 10 cups all-purpose flour

Instructions

  1. In a small bowl, dissolve yeast in warm water and set aside.
  2. In a large bowl, beat eggs and yolks until lemon colored, gradually adding sugar.
  3. Add melted margarine, salt, lemon juice, and lemon peel to the egg mixture.
  4. Beat well to combine.
  5. Blend the egg mixture into the yeast mixture.
  6. Add 6 cups of flour and beat until smooth.
  7. By hand, stir in enough remaining flour to make a soft dough.
  8. Turn the dough onto a lightly floured board and knead until smooth and elastic.
  9. Sprinkle with raisins and knead for an additional 5 minutes.
  10. Place the dough in a greased bowl, turning once to grease the top.
  11. Cover and let rise in a warm place for 1 hour.
  12. Punch down the dough.
  13. Turn onto a lightly floured board and divide into three equal parts.
  14. Let the divided dough rise for 10 minutes.
  15. Shape each into a loaf and place in greased loaf pans.
  16. Let the loaves rise in a warm place until doubled in size.
  17. Bake at 325°F (163°C) for 45 minutes.
