Ingredients

  • 3 cups cooked white rice
  • 1 (16oz) can black beans
  • 4 tbs EVOO
  • 1 cup raw spinach
  • 8-10 stalks diced asaragus
  • 1 1/2 tbs garlic
  • 1/2 cup yellow onion
  • 1/4 cup green pepper
  • 1/4 cup red pepper
  • 1 jalapeno
  • Salt
  • Pepper
  • 1 Avacado
  • 1 diced tomato
  • 6 tortillas
  • 3 cups shredded cheddar cheese
  • Hot Sauce
  • Sour Cream

Instructions

  1. Stir in can of beans and 1/2 tbs of garlic into cooked rice and leave on low heat
  2. Saute EVOO and garlic in saucepan
  3. Add onions, peppers, spinach, jalapeno and asparagus. Add approx 1 tsp salt and 2 tsp black pepper. Saute
  4. Heat oven to 350. Cover tortillas generously with cheese and slices of avocado
  5. Once cheese appears melted (5-7 minutes) pull out and use a knife to spread avocado. Ladle generous helping of rice and beans and sauteed veggies, making sure ingredients mix in tortilla before folding. garnish with tomatoes and sour cream and hot sauce!
